This recipe took me a while to figure out. This is not an ingredient that people will make at home, but would easily find in any convenience store or market. The melting salt is very nice for other recipes as well (think, queso dip or Mac’n’Cheese without needing to make a roux or risk the sauce splitting)
Ingredients:
For the melting salt (monosodium citrate)
- 1/2 tsp of baking soda (not baking powder)
- Juice from 1 large lemon or 2 smaller lemons/limes
Rest of ingredients
- 1 1/2 cup of whole milk
- 1 1/2 cup of grated cheese (120g if you want to be precise)
- 1 stick of butter
Equipment (optional, but helpful)
- Immersion blender: saves time and prevents lumps
- Silicone spatula: wood is fine too, but silicone helps scoop every last bit into the container
Steps:
- Mix baking soda and lemon juice in a cup.
- In a sauce pan, add milk and butter and set it to medium low heat while stirring
- When butter has melted, add the melting salt, stir well then add the cheese
- When cheese starts to melt, you can blend it with the immersion blender or keep stirring
- Once the desired consistency is reached, store in glass container
Uses:
Spread on toast, add to sauces, eat by the spoonful, etc.
