Feijoada (Brazilian Black Bean stew)

Ingredients:

  • 1 lb black beans, soaked overnight
  • 2 bay leaves
  • 2 smoked sausages
  • 1/2 package of bacon
  • Dried meats (optional)
  • 1 onion
  • 6 cloves garlic
  • 1 tbsp cumin
  • 1 tbsp coriander
  • salt and pepper to taste
  • cayenne pepper (optional)

Instructions:

  • Soak beans overnight (most recipes discard the water, but I usually don’t)
  • Cube onion and mince garlic and fry in pan, once translucent, add bacon
  • Once bacon is cooked (not browned yet), add the contents into pressure cooker
  • Add spices and beans (with bean water) to pressure cooker
  • Cut sausage into slices and add to pressure cooker
  • Cook for 45 minutes then let pan lose pressure naturally
  • Test for salt
